Meal Ideas

We are a split household (and I don’t mean Republican vs. Democrat, CNN vs. Glee, or mountain bike vs. cruiser). We eat both glutenous and gluten-free foods under the same roof -- it can be a challenge! For the first year after my son was diagnosed, our entire household ate gluten-free. This was designed to minimize confusion and accidental ingestion, but it was also the perfect opportunity to learn to cook quick, delicious gluten-free meals for my family. We found that simpler food preparation was preferred over complex combinations or casseroles.

I’m adamant about only preparing one meal for my entire family -- not individual dishes for every taste and dietary need. I do, however, love to honor my husband's passion for angel hair pasta, so we always have two pots of pasta boiling on spaghetti nights.

I've created about two weeks of complete meal ideas to show you which items can be easily substituted to address gluten-free needs (in parentheses).

BREAKFAST
  • toaster waffles (GF waffles), scrambled eggs, bananas
  • oatmeal (Glutenfreeda's Instant Oatmeal) with dollop of yogurt, dried fruit, nuts
  • GF cereal, cinnamon toast, sliced pears
  • fried egg over [leftover] greens and rice with tamari sauce
  • peanut butter toast (GF bread) with bananas and honey
  • blueberry pancakes (everyone eats GF), with maple syrup, scrambled eggs
  • french toast (soak GF bread first) with real maple syrup and sliced strawberries or bananas with cinnamon sugar
  • breakfast burritos with corn tortillas, cheese, salsa
  • fruit and yogurt smoothie, toast, peanut butter on a spoon
  • GF granola, yogurt and fruit
  • corned beef hash [with leftover beef and potatoes], fruit
  • doughnuts (Kinnikinnick GF Doughnuts), fruit plate

LUNCH
  • peanut butter and jelly sandwiches (GF bread), apple slices, pretzels
  • cheesy nachos, sliced pear, yogurt
  • lunchmeat and cheese sandwich (GF bread), yogurt with berries, pretzels (GF pretzels)
  • cream cheese and ham tortilla roll-up (GF teff or corn tortillas), apple
  • grilled cheese (gf bread) and soup (make sure it's GF), pineapple
  • apple slices dipped in peanut butter and honey, graham crackers (Kinnikinnick S'moreables Graham Style Crackers are great)
  • egg salad sandwich (GF bread), fruit
  • veggies with lots of hummus, apple, pretzels (GF pretzels)
  • cream cheese and jelly bagel (GF bagel), apple slices to dip in peanut butter with honey
  • chicken salad sandwich, fruit, cheese stick
  • Mac-N-Cheese (GF Mac-N-Cheese), cut veggies with hummus
  • leftover cold pasta salad from dinner last night
  • ham salad sandwiches, pickles, apple
  • teff burrito wrap with leftover meat and veggies, fruit

DINNER
  • grilled salmon with GF asian marinade, rice, stir-fried pea pods and carrots
  • Homemade Hamburger Helper and steamed broccoli
  • grilled sausage slices over polenta, sauteed greens and pepper slices
  • baked tofu over rice, stir fried cabbage, carrots, scallions
  • cheeseburgers (GF bun) with all the fixings, Ore-Ida® Tater Tots®, salad with GF salad dressing
  • spaghetti (GF pasta) with meatballs (make meatballs with GF bread crumbs), salad
  • fish tacos with grilled tilapia on corn tortillas, coleslaw with lime mayo
  • grilled chicken pieces, cooked quinoa, kale chips
  • shrimp scampi (GF pasta), salad
  • rotisserie chicken (have 2 for leftovers), roasted sweet potatoes, broccoli
  • grilled flank steak with Atchison #1 marinade, roasted potatoes, asparagus
  • pasta with sliced chicken, roasted peppers, olives, tomatoes and thinly sliced spinach
  • ham, mashed potatoes, salad with GF salad dressing
  • beef crunchy tacos (Ortega taco seasoning mix is GF/DF) with lettuce, tomatoes and olives
  • frittata of eggs, sausage, spinach and sun-dried tomatoes
  • GF/DF chicken pot pie

SNACKS
